Monday Melange – Fruity Parfait

Let us start our week on a fun and healthy note.

I want to share with you an easy to DIY recipe for a colourful parfait that I sneaked from health freak’s diary.

Have fun making it and eating it.
Fruity Parfait

Ingredients:

For Vanilla Oatmeal:

Instant Oats – 1/2 cup

Milk – 250 ml

Vanilla Essence – 1 tsp

Sugar – 3 tblspn

For Spiced Pineapples and apples:

Butter – 1 tsp

Pineapple Slices – 1 cup chopped

Apple one diced and chopped

Sugar – 3 tblspn

Salt – 1/4 tsp

Cinnamon powder – 1/2  tsp

Red Chilli Flakes – 1/2 tsp

For Vanilla Yoghurt:

Thick Unsour Curd / Yoghurt – 1 cup

Sugar – 3 tblspn

Vanilla Essence- 1 tsp

For Topping:

Sultanas or any nuts of your choice.

Chocolate chunks.

Method:

Start by making vanilla oatmeal. Take milk, sugar, vanilla and oats in a sauce pan. Heat it up and cook till the oats get thick and creamy. Spoon these in the bottom of individualglasses.

Now make the spices for the pineapple and apple.  Heat butter in a sauce pan. Add pineapple and apple  pieces along with salt, sugar, cinnamon, red chilli flakes and mix well. Cook till they turn golden and caramelized. Spoon this over the oat meal and allow them to cool down a bit.

Now make the vanilla yoghurt. Take curd, sugar and vanilla in a bowl and mix well with a spoon. Top the spiced pineapple and apple with this and sprinkle some sultanas and chocolate chunks over that.

Place in the fridge for a hour and Serve cold
